Morning Hustle Tacos

These Morning Hustle Tacos bring together cheesy scrambled eggs, crisp bacon or breakfast sausage, fire-roasted salsa, creamy lime crema, and bold Tex-Mex flavor in every bite. Warm tortillas, soft eggs, and Let’s Taco ’Bout It make this breakfast hit like a hug with some attitude.

Ingredients

For the Tacos:

  • 6 large eggs
  • ¼ cup half & half or milk
  • 1 tbsp butter
  • 1–1½ tsp Let’s Taco ’Bout It
  • ½ cup shredded sharp cheddar or pepper jack
  • 6 small flour tortillas, warmed
  • 4 strips bacon or ½ lb breakfast sausage, cooked and crumbled
  • ½ cup fire-roasted salsa
  • 1 avocado, sliced or mashed
  • Hot sauce (optional)

For the Lime Crema (Optional):

  • ¼ cup sour cream
  • Juice of ½ lime
  • Pinch of salt
  • Dash of hot sauce

Instructions

  1. Cook the eggs: In a bowl, whisk together the eggs and half & half. Melt butter in a nonstick skillet over medium heat, then add the eggs. Cook gently, stirring with a spatula, until just set. Season with Let’s Taco ’Bout It and fold in the cheese at the end.
  2. Warm the tortillas: Heat the tortillas in a dry skillet or microwave until soft and warm. Wrap in a clean towel to keep them pliable.
  3. Make the lime crema: In a small bowl, whisk together sour cream, lime juice, salt, and hot sauce until smooth.
  4. Assemble the tacos: Fill each tortilla with cheesy eggs, bacon or sausage, avocado, a spoonful of fire-roasted salsa, and a drizzle of lime crema.
  5. Finish strong: Add a light extra sprinkle of Let’s Taco ’Bout It right before serving for a little extra pop.
