Island Shrimp Skewers

Sweet Heat Shrimp Built for the Grill

Shrimp doesn’t have to play polite at the luau. These skewers bring the heat with a sweet chili, garlic, and lime marinade that hits fast and finishes with a honey glaze. Quick to prep, quicker to cook, and perfect for backyard flames.

Ingredients

  • 2 lbs large shrimp, peeled & deveined (tails on or off)
  • 1/4 cup sweet chili sauce
  • 3 tbsp honey
  • 3 cloves garlic, minced
  • Zest & juice of 1 lime
  • 1 tbsp olive oil
  • 1 tsp crushed red pepper flakes (optional)
  • 1 tsp black pepper
  • 1/2 tsp Sweet Heat 74
  • Wooden or metal skewers
  • Extra lime wedges for serving

Instructions

1. Prep the Shrimp

  1. Soak wooden skewers in water for 30 minutes if using.
  2. Pat shrimp dry with paper towels.

2. Make the Marinade

  1. In a large bowl, whisk together sweet chili sauce, honey, garlic, lime zest, lime juice, olive oil, crushed red pepper flakes, black pepper, and Sweet Heat 74.

3. Marinate the Shrimp

  1. Toss shrimp in the marinade until well coated.
  2. Marinate for 20-30 minutes. No longer or the lime will start cooking the shrimp.

4. Build the Skewers

  1. Thread shrimp onto skewers, piercing tail and head ends to secure.

5. Grill the Shrimp

  1. Preheat grill to medium-high heat (around 400°F).
  2. Grill skewers for 2-3 minutes per side until shrimp are pink, opaque, and lightly charred.

6. Serve

  1. Squeeze fresh lime over skewers.
  2. Serve with extra sweet chili sauce or a honey drizzle if desired.

Chef Paddy’s Tip

Shrimp cooks quick — stay close to the grill. The Sweet Heat 74 delivers that perfect balance of sweet and spice. These skewers shine with The Luau Mac Salad or Paddy’s Pineapple Fried Rice on the side.

Let’s cook with heart and hustle.
