Ingredients

For the Turkey:

  • 1 boneless, skin-on turkey breast (about 2–3 lbs)
  • 2 tbsp olive oil or melted butter
  • 1½–2 tbsp Mayflower Magic

For the Roasting Pan:

  • 1 lemon, halved
  • 1 onion, quartered (optional)
  • 4 garlic cloves, smashed (optional)

Instructions

  1. Preheat the oven: Set your oven to 375°F.
  2. Prep the turkey: Pat the turkey breast dry with paper towels. Rub all over with olive oil or melted butter, then season evenly with Mayflower Magic .
  3. Build the pan: Place the lemon, onion, and smashed garlic in the bottom of a roasting pan. Set the turkey breast on top, skin-side up.
  4. Roast: Roast for about 1½ hours, or until the internal temperature reaches 165°F in the thickest part. Baste occasionally with the pan juices.
  5. Rest and slice: Remove from the oven and let the turkey rest for 10–15 minutes before slicing and serving.

Chef Paddy’s Tips

  • Go Under the Skin: Mix a little butter with Mayflower Magic and rub it under the skin for even bigger flavor.
  • Let It Rest: Give the turkey time to rest before slicing so the juices stay where they belong.
  • Use the Pan: Those roasted lemon, onion, and garlic flavors in the bottom of the pan are liquid gold.
  • Built for the Holiday Table: This seasoning brings the classic herb profile that makes turkey feel like the main event.
  • Make the Leftovers Count: This is perfect for sandwiches, bowls, or folding into your Hot Brown Mac Skillet.

Let’s cook with heart and hustle.
