Savory Roasted Red Potatoes with Caramelized Onion and Roasted Garlic

Simple doesn’t mean boring. These roasted red potatoes are crisp on the outside, tender on the inside, and layered with slow-caramelized onion and roasted garlic for a nostalgic, from-scratch twist that brings every seat at the table together.

Ingredients

  • 2 lbs red potatoes, halved or quartered
  • 1 medium yellow onion, thinly sliced
  • 1 head garlic
  • 2 tbsp olive oil (plus more as needed)
  • 1 tbsp butter, melted
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp onion powder (optional)
  • 1 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F. Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in foil, and place on a small baking sheet. Roast for 35–40 minutes until soft and golden.
  2. While the garlic roasts, prepare the potatoes. In a large bowl, toss potatoes with olive oil, melted butter, salt, pepper, thyme, paprika, and onion powder (if using).
  3. After 20 minutes of garlic roasting, increase the oven temperature to 425°F. Line a separate large baking sheet with parchment paper.
  4. Spread potatoes cut side down in a single layer. Roast for 25–30 minutes, flipping once halfway through, until golden and crisp.
  5. Meanwhile, caramelize the onions. In a skillet over medium-low heat, drizzle a little olive oil. Add sliced onions and cook slowly, stirring occasionally, until deep golden brown (about 15–20 minutes).
  6. Squeeze the roasted garlic cloves out of their skins and mash gently with a fork until smooth.
  7. Once the potatoes are roasted, toss them with the caramelized onions and roasted garlic until evenly coated.
  8. Garnish with fresh parsley and serve warm.
