Cheddar Biscuits — Charlie’s Birthday Style

Warm, flaky biscuits packed with cheddar and baked fresh for the table.

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp sugar
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ cup cold butter, cubed
  • 1½ cups shredded sharp cheddar cheese
  • ¾ cup whole milk
  • 2 tbsp melted butter (for brushing)
  • ½ tsp garlic powder (for topping)

Instructions

  1. Preheat oven. Set oven to 425°F and line a baking sheet with parchment paper.
  2. Mix dry ingredients. In a large bowl, whisk together flour, baking powder, sugar, salt, and garlic powder.
  3. Cut in butter. Add cold butter and work it in until the mixture resembles coarse crumbs.
  4. Add cheese. Fold in shredded cheddar.
  5. Add milk. Stir just until dough comes together. Do not overmix.
  6. Portion. Scoop dough onto baking sheet in mounds.
  7. Bake. Bake for 12–15 minutes until golden.
  8. Finish. Brush with melted butter and sprinkle lightly with garlic powder.

Chef Paddy’s Tip

  • Cold butter = fluffy biscuits.
  • Don’t overwork the dough or they’ll get dense.
  • Perfect with pulled pork, rib roast, or just on their own.
