Ingredients

For the Packet:

  • 2 medium zucchini, sliced into ¼-inch coins
  • 2 yellow summer squash, sliced into ¼-inch coins
  • 1 pint cherry or grape tomatoes, halved
  • 2 tbsp olive oil
  • Juice and zest of ½ lemon

Instructions

  1. Preheat: Heat your grill to medium or your oven to 425°F.
