The Porch Packet

Zucchini. Summer squash. Cherry tomatoes. Olive oil, lemon, and bold seasoning sealed tight in foil. The Porch Packet is simple, bright, and backyard-ready—made for slow days, folding chairs, and grilled flavor without the fuss. It’s the kind of side you throw on with everything else, then wonder why it’s the first thing gone.

Ingredients

  • 2 medium zucchini, sliced into ¼-inch coins
  • 2 yellow summer squash, sliced into ¼-inch coins
  • 1 pint cherry or grape tomatoes, halved
  • 2 tbsp olive oil
  • Juice and zest of ½ lemon
  • 1–1½ tsp Let’s Get After It seasoning (or to taste)
    or your favorite salt, pepper, garlic blend
  • Heavy-duty aluminum foil
  • Optional: torn fresh basil or parsley for garnish
  • Optional: lemon wedges for serving

Instructions

  1. Preheat your grill to medium heat or your oven to 425°F (218°C).
  2. Tear 2 large sheets of heavy-duty aluminum foil (about 12" x 18").
  3. In a large bowl, toss zucchini, squash, and tomatoes with olive oil, lemon juice, zest, and Let’s Get After It seasoning.
  4. Divide the mixture between the two foil sheets. Fold each into a secure packet—folding over the top, then crimping the edges shut.
  5. Place on grill (or on a baking sheet if using the oven) and cook for 15–18 minutes, until vegetables are tender and steaming.
  6. Carefully open the foil packets (watch for steam!) and garnish with fresh herbs and extra lemon if desired.
  7. Serve hot, warm, or room temp—whatever the porch calls for.

Chef Paddy’s Tip

  • Slice the squash evenly so it cooks at the same rate—no soggy, no raw.
  • Add a sprinkle of Parmesan at the end if you want a little melt and salt pop.
  • Make a double batch. Trust me.
